Hi,
1º Enter here:

2º Go to Options --> Flat form --> Apply
3º Go to Fields --> Uncheck field "Customer" --> Apply
Then the field does not disappears, but it places at the end

We have managed to reproduce the issue on our side.
The necessary fix will be added to the minor release with ETA Jan14.

The fix for deselecting fields in flat view is already available there.
